Taste : Beautiful with violet hues. Very fruity nose with aromas of cherry and crushed blackcurrant. Rich, round palate which maintains the fruit. Long pleasant finish.
Appellation Côtes du Roussillon
Soil : Black schistes.
Grape varieties : 40% Grenache noir, 40% Syrah, 10% Mourvèdre, 10% Carignan
Winemaking : Manual harvest.
Total destalking and separate vinification for each variety of grape. The Fermentation last 15 days and during this period we punch the cap and make some pumping over.
The temperature is controlled for to keep aromas.
During the pressing the press-wine and free-run wine are separated.The malolactic fermentation and the ageing is made in stainless steel tanks. The final blend is made after 8 month of ageing.
The bottling is made in site.
