Aroma : Rich and powerful nose which combines bud of blackcurrant, laurel and pepper and after a moment the ripe cherry.
Taste : Deep garnet-red colour. Rich and powerful nose which combines leather notes, liquor of wild strawberries
and under wood. On the palate, it is a very well structured and virile wine. Its flavours of cherry jam harmoniously meld with wood. Very good length.
Appellation Côtes de Roussillon Villages
Soil : Black schistes.
Grape varieties : 1/3 Syrah, 1/3 Grenache, 1/3 Mourvèdre
Winemaking : Manual harvest.
Each variety of grape are fermented separately after a total destalking. the grapes are fremented for 16/20 days with regular punching cap. The temperature is controlled for a sweet extraction. During the pressing the press-wine and free-run wine are separated. The malolactic fermentation is made in stainless steel tanks.
Each grape variety is ageing in barrel for 10 months.
The final blend is made after the ageing.
